ZUCCHINI MUFFINS
INGREDIENTS:
1 zucchini
1 cup wheat bran
8 Tbsp egg whites
1/2 cup unsweetened almond milk
Carb Master cinnamon bun yogurt cup
3 Tbsp cinnamon
3 Tbsp stevia
6 Tbsp LadyBoss LEAN Vanilla Cake Protein Powder
1 Tbsp coconut flour
Handful of crushed pecans
DIRECTIONS:
1. Preheat oven to 400 F.
2. Make coconut flour by blending coconut flakes into a flour consistency. Then blend zucchini until completely chopped into tiny tiny pieces.
3. Then combine wheat bran, egg whites, almond milk, cinnamon, sugar, shake mix, and coconut flour into a blender and until evenly mixed.
4. Spray 12 cup muffin pan with nonstick spray and scoop batter into all of the cups! Place in oven and bake 20-30 min - until toothpick comes out clean!
5. ICING: mix yogurt cup with cinnamon/granulated sugar and microwave for 20-30 seconds or until warm.
6. Remove muffins with a spoon - top with spoon of yogurt icing and crushed pecans.
