Fried Rice

INGREDIENTS:

1 package Uncle Bens 90 second brown rice package cooked per instructions
2 cups frozen peas and carrots mixture
4 eggs
1 tsp garlic powder
1 12.5 oz can chicken (drained and rinsed)
Brags or low sodium soy sauce
2 tablespoon olive oil
1 bunch of green onion stalks or diced onion

INSTRUCTIONS:

1. Scramble eggs on medium heat in a medium anti-stick pan with 1 tablespoon olive oil and set aside.
2. Add 1 tablespoon olive oil to the same pan and add cooked rice, veggies, garlic powder, and chicken; saute until all ingredients are warm.
3. Add eggs back into the pan and stir eggs into the rice mixture.
4. Remove from heat and separate into 4 servings.
5. Top with soy sauce and sliced green onion to taste.
