Sweet Potato Gnocchi

GNOCCHI INGREDIENTS: 

1 lb sweet potatoes, cooked

1 cup almond flour

1 large egg

1 Tablespoon salt

1/4 teaspoon black pepper

1/2 teaspoon allspice

1/2 teaspoon ginger

1 Tablespoon extra virgin olive oil

 

GNOCCHI INSTRUCTIONS:

1. Bring a large pot of water to a boil while you prepare the gnocchi 

2. Scoop flesh from cooked sweet potatoes into a mixing bowl and discard the skin

3. Mix in egg, salt, black pepper, allspice, and ginger until it's mostly smooth

4. Add flour 1/2 cup at a time, kneading gently.

5. Once the dough is easy to handle, transfer to a floured surface and roll out into a long skinny rope about the diameter of your thumb. 

6. Cut into bite-sized pieces

7. Add the gnocchi to the boiling water and let cook until it rises to the top

8. Scoop out the cooked gnocchi with a slotted spoon or strainer and place in a bowl prepared with olive oil. 

9. Toss to coat gnocchi and set aside while you prepare sauce (ingredients and instructions below)


SAUCE INGREDIENTS:

2 Tablespoons butter

2 Tablespoons almond flour

1 1/2 cups almond milk (room temp or slightly warmed)

3/4 cup parmesan cheese

1/2 teaspoon sage

1/2 teaspoon rosemary

1/2 teaspoon oregano

Fresh parsley for garnish

 

SAUCE INSTRUCTIONS:

1. Heat butter in a large skillet on medium to high heat until butter begins to bubble and foam. 

2. Add the gnocchi and pan-fry until it turns golden brown

3. Add in sage, rosemary, and oregano

4. Remove from heat and let cool just enough for butter to thicken

5. Whisk almond flour and parmesan cheese into almond milk to make a cream

6. Add cream to skillet of golden brown gnocchi, toss, and serve immediately
