CHICKEN SALAD SANDWICH
INGREDIENTS:
1 slice Ezekiel Sprouted Bread
1 grilled chicken breast, shredded
1/4 stalk celery, diced
1/8 cup chopped walnuts
1/8 cup dried cranberries
1/8 cup Greek yogurt
1/8 cup water
1 Tbsp honey
1 Tbsp dijon mustard
Fresh ground pepper
INSTRUCTIONS:
1. In a large mixing bowl, toss together cooked and shredded chicken, celery, walnuts, and dried cranberries. Then set aside.
2. In a separate mixing bowl, whisk together all ingredients water, dijon mustard, honey, and Greek yogurt until well blended.
3. Pour dressing mixture over chicken mixture and toss to evenly coat. Serve on Ezekiel bread. Store any extra in refrigerator.
