MEDITERRANEAN COD & GREEN BEANS
INGREDIENTS:
1 medium cod fillet
1/8 cup halved cherry tomatoes
1/4 cup artichoke hearts
1 lemon, sliced thinly
2 Tbsp olive oil
1 bag steamable green beans
INSTRUCTIONS:
1. Preheat skillet to medium heat. Cook green beans to bag instructions.
2. Add cod fillets to large skillet atop all other ingredients and add olive oil on top.
3. Cook until the juices bubble and the fish is no longer opaque, but white all the way through.
