INGREDIENTS: 

2 tablespoons olive oil

5 cups pumpkin purée

1 large yellow onion, chopped

4 large garlic cloves, minced

1/2 teaspoon sea salt

1/2 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/8 teaspoon cloves

3 cups vegetable broth

1/2 cup coconut milk

1/2 teaspoon freshly ground black pepper

 

INSTRUCTIONS:

1. Heat olive oil in a large pot over medium heat. Once oil is simmering, add onion, garlic and salt to the pot. Stir to combine, and stir occasionally, until onion is translucent, usually takes 6 to 8 minutes.

2. Add pumpkin, cinnamon, nutmeg, cloves, and pepper. Add in the broth and bring the mixture to a boil, then reduce heat and simmer for about 15 minutes.

3. Remove the soup from heat and add the coconut milk (and honey, if desired). Use an immersion blender to blend the soup in the pot, or blend it in batches in your stand blender. Be careful, as it will be hot! Blend the mixture until smooth. Transfer the puréed soup to bowl for serving.

4. Freeze leftovers for easy meal prep!

PRO TIPS:

*Add 2 Tablespoons honey for a sweeter taste

*Garnish with pepitas

1 serving = 1 cup soup
