FIG & ARUGULA SALAD


INGREDIENTS:

1 fresh chicken breast
3 fresh figs, quartered
3 cups arugula
2 Tbsp toasted pine nuts
1/4 cup fat-free shredded mozzarella cheese
Balsamic vinegar dressing

INSTRUCTIONS

1. Preheat skillet to medium-high heat.

2. Cut chicken into cubes. Add to skillet and cook until inside is no longer pink.

3. Assemble salad and enjoy with balsamic vinegar dressing on the side.
