HONEY SALMON & MASHED SWEET POTATOES


INGREDIENTS:

4 oz. salmon
1 bag Steamfresh asparagus
Medium sweet potato
Fresh ground pepper
2 Tbsp coconut oil
2 Tbsp honey

INSTRUCTIONS:

1. Heat skillet to medium heat. Add 2 Tbsp coconut oil to skillet.

2. Microwave sweet potato submerged in a bowl of water for 10 min or until soft.

3. Once oil begins to "pop" add salmon to skillet. Add honey to salmon. Cook salmon until crispy on the outside and flaky on the inside. (You want the middle to be a light pink color not a bright pink. Use your finger to feel if inside is warm & cooked). 

4. Cook asparagus according to bag instructions. Shell out cooked sweet potato and mash with fork then season with pepper.

WARNING: Be careful not to be burned by the heated oil.
