BLOOD ORANGE MAHI MAHI


INGREDIENTS:

1 blood orange
1/2 avocado
2 tsp lemon juice
2 tsp olive oil
1 mahi-mahi fillet                                                                               
1/2 cup instant brown rice
Salt and pepper

INSTRUCTIONS:

1. Using small sharp knife, cut peel and white pith from orange. Working over small bowl, cut between membranes to release segments. Add avocado and lemon juice to oranges in bowl; stir gently to blend. Season salsa to taste with pepper.

2. Heat oil in heavy medium skillet over medium high heat. Sprinkle fish with salt and pepper. Add fish to skillet and sauté until brown and cooked through, about 5 minutes per side. Cook rice according to instructions.

3. Top cooked mahi mahi with orange salsa mixture.
