Chicken & Savory LadyBoss Lean Waffles - Created by LadyBoss Senior Coach Piper


INGREDIENTS:

2 cups gluten free baking mix

3 scoops LadyBoss Lean Protein Powder

3 eggs

1/2 cup oil (coconut or vegetable)

2-3 cups water

1 log goat cheese, softened

1 cup chopped fresh spinach

Salt and Pepper

4 chicken thighs or breasts, seasoned with salt and pepper or other preferred seasoning mix

2 cups grade A maple syrup

3-4 Tbsp whole grain mustard

Parsley

 

INSTRUCTIONS:

1. Heat waffle iron

2. Heat oven to 400 degrees

3. Season chicken thighs and place in heat proof pan, place in oven

4. Bake chicken for 20-30 minutes, or until juice runs clear. Set aside

5. Mix waffle mix, Lean, eggs, oil, and water well

6. Add goat cheese, spinach, S&P, to waffle batter, mix well

7. Pour waffle mix into iron, cook until golden brown. Set aside

8. Mix syrup and whole grain mustard, warm on high in microwave proof dish for up to 1 minute

9. Plate: Cut waffle into quarters. Place chicken thigh next to or atop waffles. Spoon over whole grain syrup. Garnish with parsley

*Play with the ingredients. Rather than chicken, goat cheese, and spinach, try chorizo, cojita, and cilantro for a Mexican infused waffle OR sausage, chive, and sesame for an Oriental flavor.
