GREEK CHICKEN & RICE
INGREDIENTS:
1 lemon
1 Tbsp olive oil
1 boneless, skinless chicken breast
2 cups instant brown rice
6 halved grape tomatoes
1 baby cucumber
1/4 cup reduced-fat crumbled feta cheese
INSTRUCTIONS:
1. Preheat skillet to medium high heat.
2. Add all ingredients except rice and cucumber to skillet. Cook together, turning over until chicken is no longer pink on the inside.
3. Cook rice according to instructions.
4. Top 1/2 cup cooked rice with chicken and then add chopped cucumber and fresh pepper on top.
