Avocado Cherry Chicken

AVOCADO CHERRY CHICKEN


INGREDIENTS:

1 pinch chili powder
1 Tbsp extra-virgin olive oil
1 lime
Fresh ground pepper
1 boneless, skinless chicken breast
1/4 cup sweet cherries, pitted and chopped
1/4 jalapeño, seeded and chopped
1/2 avocado, chopped                                                                     2 cups instant brown rice

INSTRUCTIONS:

1. Preheat skillet to medium high heat.

2. Add all ingredients except avocado to skillet and cook together, turning over until chicken is no longer pink on the inside.

3. Cook rice according to instructions.

4. Top 1/2 cup cooked rice with chicken and cooked salsa, then add avocado and fresh pepper on top.
