Spinach Artichoke Stuffed Chicken

SPINACH ARTICHOKE STUFFED CHICKEN


INGREDIENTS:

1 fresh chicken breast
1 bag Steamfresh green beans
1 cup spinach leaves
1 can artichoke hearts in brine, finely chopped
1/4 cup shredded fat-free mozzarella cheese
Fresh ground pepper

INSTRUCTIONS:

1. Preheat 2 small skillets, one to medium high heat and the other to low medium heat.

2. Season both sides of the chicken breast with pepper.

3. With your hand supporting each piece, cut a slit or pocket in the center, about 3/4 quarter of the way through, being careful not to cut all the way.

4. Cook green beans according to bag instructions.

5. Begin cooking chicken in the medium high skillet.

6. Cook spinach, artichokes, cheese and pepper together in the low medium heat skillet. Once chicken is no longer pink on the inside and spinach artichoke dip has wilted and cheese has melted, scoop the spinach dip into the pocket of the chicken.

7. Plate the chicken and green beans. Add pepper on top to taste.
