Caprese Chicken With Asparagus

CAPRESE CHICKEN WITH ASPARAGUS


INGREDIENTS:

1 Tbsp extra-virgin olive oil
1 boneless, skinless chicken breast
Fresh ground pepper
1 Tbsp balsamic vinegar
6 grape tomatoes, halved
10 spears of fresh asparagus
1/4 cup fat-free shredded mozzarella cheese

INSTRUCTIONS:

1. Preheat skillet to medium high heat.

2. Add olive oil and balsamic vinegar to skillet along with chicken, sliced tomatoes, and asparagus spears.

3. Cover and let cook until chicken is no longer pink on the inside and tomatoes are wilted.

4. Add cheese to the top of chicken, cover again until melted.

5. Sprinkle with pepper and enjoy!
