BELL PEPPER EGG RINGS
INGREDIENTS:
1 large red bell pepper
3 eggs
Fresh ground pepper
INSTRUCTIONS:
1. Preheat skillet to medium high heat and spray with nonstick spray.
2. Cut the top and bottom off of the bell pepper and slice into 3 thick rings.
3. Place the rings in the skillet and crack an egg into each ring. (Make sure to hold the ring down with spatula for a few seconds so the egg doesn’t leak out.) Cook eggs until no longer transparent and top with fresh pepper.
