MUSHROOM & SPINACH OMELETTE


INGREDIENTS:

1 cup egg whites
1 cup spinach
1/2 cup raw mushrooms
1/4 cup fat-free cheddar cheese
Fresh ground pepper

INSTRUCTIONS:

1. Preheat skillet to medium heat. Spray with nonstick spray. Add spinach and mushrooms to skillet.

2. Once veggies are cooked, add in egg whites. Cook until egg whites are white and no longer runny.

3. Add cheese to the middle and fold omelet over. Allow cheese to melt and top omelette with fresh pepper.
