PESTO EGGS
INGREDIENTS:
2 eggs
1/4 cup diced sweet peppers
1/4 cup fat-free shredded mozzarella cheese
1 Tbsp pesto
Fresh ground pepper
INSTRUCTIONS:
1. Preheat skillet to medium high heat. Cook diced peppers in skillet. Set aside and then spray pan with nonstick spray and add eggs.
2. Cook eggs to your liking. Top with shredded mozzarella cheese.
3. Plate the eggs and top with pesto, cooked peppers, and fresh pepper on top.
