EGGS FLORENTINE TOAST


INGREDIENTS:

1 slice Ezekiel Sprouted Bread or GF bread
1 egg
1/2 lemon
1 cup spinach
2 Tbsp fat-free sour cream
Fresh ground pepper

INSTRUCTIONS:

1. Preheat skillet to medium high heat. Add spinach. Once spinach is wilted, set aside.

2. Add egg to skillet and cook over easy (or to your liking).

3. Mix together the sour cream and juice from lemon.

4. Toast the bread. Top the toast with the spinach, egg, and sour cream mix, and fresh pepper on top!
