BAKED STUFFED TOMATO


INGREDIENTS:

1 large egg
1 medium tomato
1/4 cup fat-free mozzarella cheese
Fresh ground pepper

INSTRUCTIONS:

1. Preheat oven to 450°F.

2. Cutting at an angle, core the tomato. Use a spoon or melon baller to remove tomato flesh from the inside, taking care to not cut into the sides of the tomato. If your tomato does not sit flat on its own, slice a very small piece off the bottom so that it does not roll.

3. Crack one egg into tomato cavity, top with cheese, and sprinkle with pepper. 

4. Bake for 20 minutes or until egg is set. Let cool slightly and use a large spatula to serve.
